Where I live is practically in the middle of nowhere, so as you can imagine there isn't a great range of takeaways at the best of times. Right now, in the situation we are in (the global pandemic if you somehow weren't aware), there is even less on offer. I don't even have UberEats or Deliveroo services here... so my current takeaway options are Domino's, and then a range of kebab shops. That's it, not ideal.
I have enjoyed cooking since going to uni, as I find it quite therapeutic. Lockdown has definitely helped me experiment more and to no surprise I have been eating much healthier at home as apposed to uni. But here's the thing, when I start craving a Chinese takeaway... that. is. it. So, taking matters into my own hands I decided to make my own (very easy) versions of some favourites:
1. Salt n Pepper fried prawns with curry sauce
2. Salt n Pepper chicken with curry sauce
3. Sticky chicken noodles
4. Creamy coconut and tomato shrimp curry (very similar to massaman curry, and can also be made as a soup)
